Strawberry pie - not a failure

Happy Easter.

To us Easter is bunnies, chocolate and food.  I'm not religious at all. I didn't got to church much as a kid. I did however get married in a church. It was pretty.

Anywho back to the pie,  since I failed at Pi day this year I made a pie for Easter that I knew wouldn't flop. I've made this pie before and man is it good. A very simple pie.

Here is the simple strawberry cream pie.

Start with a simple graham cracker crust. Make extra an let you spastic kid eat it out of the bowl with a   spoon.

I bought this blender at Salvation Army a while back. Best blender I ever owned. 

Next prepare the filling. Nothing fancy here. All neufchâtel cheese is lower in fat and higher in moisture than regular cream cheese, making it softer.  Some sugar, milk, and vanilla. I broke out my kitchen aid for the job.  Mixes it fast and smooth.

I got this as a wedding gift back in 2007. It came from my then boss.

Then plop it in the crust.  I used a white pyrex pie plate.  The one I got at the antique market.  Yay for first time using a dish!

Next top with sliced strawberries.  This makes it pop.  So beautiful.  Eat handful of strawberries as you top it.  Don't forget to keep an eye on the kid cutting up strawberries. And make sure to have enough. Eating while cooking makes cooking fun.

Then make a purée and heat it in the stove with sugar and cornstarch. Don't go talking to your father in law about who knows what and scorch it.

Drizzle purée on top.

Eat the whole thing in one sitting and pray it goes to your boobs and not your thighs.

Who am I kidding.  Make 2 and hide in the bathroom so you don't have to share with the small people in the house. You can always get liposuction.

This is one of my favorite pies. Only because it is hard to screw up, looks pretty and tastes great.

Here is the recipe.  I got it from a friend and have no clue where she got.  I've added more sugar than it calls for.  So here is my high sugar recipe.  Credit to whoever she got it from.

Simple and not very many ingredients. 

Strawberry cream cheese pie

2 packages neufchâtel cream cheese, softened
1/2 cup sugar
1 TB milk
1/4 tsp vanilla (please don't use imitation!)

Strawberries, sliced
1/2 -1 cup cut strawberries
1/4 cup water
1/4 cup sugar
1/2 tsp corn starch

Mix cheese, sugar, milk and vanilla together until smooth.

Plop in crust.

Top with sliced strawberries.

Puree cut strawberries.  Mix water and corn starch. On medium heat add water/corn starch mix and sugar. Heat until thick.

Drizzle on top of pie.

Keep refrigerated  until ready to eat.

Happy Birthday!


Yup today is my birthday. I'm 28. Well I wasn't born until 9:35pm so I have a few hours. Did I ever tell you I was born in the hallway? That my mother had to convince my father she was in labor? That my dad bought me a purple dress that was size 9month to bring my 8lb little self home in? Well if I didn't you know now.

Since I know THH won't get me Pyrex I went thrifting all by myself. I hit up my normal stores and even found a new one. The new one was clean and very little fun old stuff. Still it as a nice store.

Here are my lovely presents to myself.

Store #1. Salvation Army, Long Beach

Cradle for 404 or "the Beast." I don't have a correct 404 yet. I've seen Square Flowers with this, with a lid. One day I will find one.

Verde 475. With lid. I had a coupon too. I already have this one but I love green. And it had a lid. It may end up for sale soon sans lid.

Store #2. St. Vincents Thrift store. NOTHING! sad sad sad.

Store #3. Salvation Army, Downey

Old Orchard 442. I took a chance that I did not have this one. I need to make a catalog of all my Pyrex so I don't buy anymore of the ones I have.

Yellow 503 Large refrigerator dish, with lid. I got this because it does have a lid. I have 2 others, one for a gift.  I also gave my mom a yellow.   Again this one will end up for sale here in a bit.

Store #4. Goodwill, Downey NOTHING!! sad sad sad

Store #5 Arc Value Village NOTHING!!! again sad sad sad

Store #6 Veterans Thrift Store, Long Beach

Verde Loaf, dirty, cleaned up really nice. My first loaf. I never see loafs, not even at the Antique Market here. I have the lasagna pan, all I need is the square baker.

Kelly Green 024. I love this size. Just last night I made fruit salad in a avocado colored one. Plus these all look great stacked together.

Store #7 Goodwill, Long Beach NOTHING last store was super sad.

$5 Gold

2 weeks ago before my parents got here  I had to take my donation to the thrift store.  I was also in need of some shirts. I got my shirts. I like them. They fit and are a bit cooler for the summer.  But I walked down to the furniture to browse and spotted this:

I walked over.  Lifted the seat. It worked.  Great shape. Saw the price $9.99. Picked it up and walked to up to pay.  Half off. Sweet deal.

When I dropped off my donation the guy who helped me commented on my stealth tactic.  He said "I saw you look at it.  Turned my head for a second. Then you and the chair were gone."  I told him I was a pro at this. He laughed. It cleaned up nicely. It was dirttttty.

It cleaned up very nice. And now lives below my wax paper holder I got a few years back. Can you spot some Pyrex in that picture?

Then the next day I had some time to kill before hitting up a friend. So I went into the antique mall I like to browse. Never buy anything. Well I came home with this golden acorn divided dish. Only because it was cheap. Or I would have left it. It is neat. I don't have any golden acorn pyrex yet. Now I do.

Mini Vacation Finds

So my brother just got back from Afghanistan. He drove out here to see my brother and I and my mother also came along. Yes my immediate family all in one house. Crazy. It was a fantastic 4 days.

On the way down to my other brothers we made a pit stop at the Long Beach Antique Market.  Just my mom, stepdad, THM and I.

I offered $5 and the woman accepted.

My mother actually spotted this and talked me into it. I do like it.  Saw another at a different both marked $15. I think I got the better deal.


Pie Plates. Pink, Green and White (no handles) Marked $5.  White with handles marked $3. I paid $15 for all, $3.75 a piece.

I wanted the bottom 3. After not finding any pie plates for a year. I talked the lady into $12 for the 3 (and I had to do some bargaining too, she didn't want to come down on her price) Then just as she was getting her money to make me change, almost in my hand I said "throw in this one marked $3 for an even $15)  Basically I got one free. I think when I left she wasn't too happy. I drive a bargain.

The Early American was on a half off table. I was prepared to offer $5 until I saw it was on the half off table. It finishes my set.

Old Orchard was at the "Pyrex Lady's" table.  She wanted $6 and I literally waved a 5 dollar bill at her and said "5 or nothing for the ugly one."  She reluctantly took the $5. That was the last table  we stopped at for the day.

The next day while my mom and I were waiting for everyone to get ready for the day we took a short (2 hours, LOL) trip to a few thrift stores. THM stayed with my niece and played.

Shenandoah Set $9.99 Goodwill, Mission Bay, San Diego, CA  

Used my gift certificate from christmas for this. My brother got me one and it could only be used at San Diego goodwills. So happy to be able to use it on Pyrex.

I don't care for the pattern in cinderella bowls, but thCinderella Casseroles (480 Set) - 473, 474, 475 is very pretty.

Last but not least is the Top Prize of the trip. Tuesday I had to run to CVS to get some Benadryl as THM had an allergic reaction to the sheets at the rental house we stayed at. He was swollen and red.  And covered in hives. Poor kid. Still he never acted like anything was wrong.

We stopped at a goodwill and there was a little thrift store about 2 doors down. We jumped in, it was Military Discount day (and I had my Army man with me!) I spotted the Friendship 443. The last one I needed to finish the set my mom got when she was married. What was the best part is my mom was with me. She bought it to complete her (my) set. It means the most to complete that set with her.  I will always know that is a replacement, maybe my kid will break it one day like we did hers.

We all drank, played hard and had to say good bye. But not forever.

Lemon Meringue Pi in Pyrex

Can you belive it has been a year already since the last Pi day? Are you wondering what Pi day is? Pi is ,according to Wikipedia, the number π (/p/) is a mathematical constant that is the ratio of a circle's circumference to its diameter, and is approximately equal to 3.14159. Todays date: 3-14. 

I know I am such a nerd

So what do we do on Pi day? Make pie of course. 

This year I tried the recipe for Lemon Meringue pie from the Pyrex Prize Recipes book. 

I also made the crust form the book. I told you I would have a recipe and here is the crust recipe. 

I got to use my glass rolling pin for the first time, note that the ice cubes were to big to fit. Opps. 

Pie Crust
Pg. 98  For one 8 1/2 inch pie plate. 

1 Cup sifted Flour
1/2 cup teaspoon salt
3 TB water
1/2 Cup Shortening

Sift flour and salt together. Cut in shortening. Sprinkle with water, on tablespoon at a time until  dough stick together. 

I am pretty sure you know what to do from there. Roll it and put it in a pie plate. If you need to bake, bake at 425f for 16 to 20 minutes or until lightly browned. Let cool. 

Back to the lemon. And that what is this pie turned out to be. It didn't set.  The meringue was way to salty. I followed the recipe step by step. UGG. Most of this book is a miss, but I will try most every recipe because you never know when you will find a gem.

 I got to use an array of Pyrex. I also found out in my decluttering that there is a side of  cheese grater is a zester. Yay I can get rid of the zester in the utensil drawer!

 He was so happy to help me in the kitchen.  He got to stir and pour. He was very careful with my flameware. I do have a saucepan but I need the band and handle.  If you have one I would gladly buy it off you.

He also juiced the lemons on my old glass hand juicer. I think I picked this one up at a yard sale for a dollar.   I love glass juicers.

I didn't let him handle the raw eggs. He isn't that great at hand washing yet.

Please note the recipe called to stir it the entire time. I didn't. Opps. So I burned the crap out of the first batch of filling. So I used the insert to the double boiler for the second batch.

Filled and ready for the meringue. In a whole year I have not found a second pie plate. I am hitting up the same flea market I got this one at this Sunday with my mom.  I hope to find another one there. 

The meringue whipped up fast. I have some old fashioned hand beaters that do a better job than my kitchen aid. Good thing the kitch aid stand mixer was a gift. 

So the Meringue was awful Way too salty. I should of halved it. The filling didn't set. But it looks great!!! And I made it with help from THM. Nothing beats making pie with my boy.

Pyrex soufflé

Would you like to know what is in this box?

I was browsing eBay aka feebay a few week ago. I punched in an searches rare Pyrex. Just for a laugh. It normally has some random DWD for a laughable amount of change.

Well I spotted something. Something I have only ever seen on Flickr.

I instantly hit "watch item".

I watched. And watched. And no one bid.

I bid with 10 seconds left.

I won. That is what I do. Wait to the last 10 seconds and swoop in. Haha makes me feel all mission impossible.

So here it what it is.

A Pyrex soufflé dish. 8 1/2 inches in diameter. White aka opal. They come in a set of 3. The hunt is on.

Now they did make these in color an one day I will own them. Also they are marked pyrex.

The small ones are Federal. The larger one is Pyrex!

I also have these federal soufflé dishes. Picked them up at Salvation Army for cheap. Perfect for individual chocolate soufflés.

Yummy chocolate soufflé. Next Tuesday I will show you it in action making chocolate soufflé.

Pyrex I didn't Buy 7

Well since Pyrex hasn't been in total abundance  here lately, there hasn't been much I haven't bought. Until now.

Ugg really $15 for a single, scratched up, faded, awful looking bowl? I think they got their panties on to tight. Went back a few days later and surprise surprise, it was still there. And still didn't come home with me.

Another poor bowl left to go to a good home. Slightly dishwasher damaged, and some noticeable scratches. I have this set.  Been there a few weeks now.

Thicker primary green, beat to hell. I think they think just because it is Pyrex they will charge and arm and a leg for beat up ones.  I mean I have some beat up ones, but I paid like a dollar for them, no way I am going to spend over 5 just for the brand name here. 

Maybe they need to buy some larger size panties. Get the blood flowing back so their brain works. I swear they need to chill out on their prices. You are a Thrift Store Salvation Amry, get it togther man!!!
